Happy Easter! How have you been? I’m really excited to be home for the holidays (ahem, “study break.”) I can’t believe I’ve already been at Uni for 6 weeks! I have so much to tell you…but first let’s talk food. This week I’ve got an excellent (eggcellent did you say?) cookie recipe to share. If you don’t want to look at another chocolate egg again for the rest of your life, you are in luck…these are crispy, colourful and chocolate-free. Let me introduce you to…Funfetti shortbread!
You won’t believe how much I’ve missed you! I’m into my second week of university life now, and things are getting rather hectic. It’s a whirlwind of new people, information and experiences. Now, as I don’t have access to a kitchen (cry me a river,) I’m making this post one which features a whole load of creative and inspiring people. So if you have a mo, go check them out. This week marks the end of life as I know it! As of tomorrow I will be living in the big smoke, starting university. I can’t say I’m really prepared (I only just found out I am meant to bring a duvet) but in all fairness I’ve watched swallows try to leave their nest and they struggle (flap and cry) just as much as I am. Then there is always the conundrum of what to take with you. I’ve definitely over-packed…but most of it is food, because God-forbid I should starve! Anyway, amongst all of this madness I bring you a slice (more like scoop) of comfort, in the form of jumble-berry crumble.
Happy valentine’s day! As a self-confessed romantic, today is one of my favourites. Now I know there’s a lot of hate out there for this particular ‘pathetic, superficial, commercial’ holiday, so I’m gonna (attempt to) convince you to love Valentine’s as much as me. And if that fails…at least we can agree that nothing beats chocolate mousse right?
I’m very excited to say this week I’ve got a super savoury recipe for you to try! It is pretty quick and requires minimal effort. So even the most unenthusiastic (lazy) of you should manage. We are making ‘Easy peasy yes pleasy risotto’ (yes it is just as cheesy as its’ name.)
I’m baaaaaack! I can’t say I’m too pleased about this though. Ten leisurely days of sunbathing, beach runs, afternoon naps and swimming can do that to you. Today I’m bringing you one of my favourite desserts…’nice’ cream. That’s ice cream made entirely out of bananas. I promise it’s even better than it sounds! But before we get to that, my holiday taught me several important lessons, and I thought I would share them with you (to spare you from making the same foolish mistakes.)
I don’t know about you…but down under in NZ, summer is finally starting. Like it’s actually hot enough that I don’t need my electric blanket on. Now I may sound like a terrible wuss, but I’ll have you know, I have been swimming (in the freezing ocean) 3 times already this summer. And since things are heating up around here, this week seemed like the perfect occasion to bring out a delicious array of smoothies.

For our first recipe of the year, I bring you…Overnight oats! Now some of you may be less than enthused about this as you may have not-so-fond memories of gluggy, luke-warm camp porridge, but I can assure you this is nothing like that! Overnight oats are the Rolls Royce as far as oatmeal goes. Not only are they delicious and filling, but also really versatile. I’m giving you 4 variations to try out.
Firstly, I hope you had a lovely Christmas. I hope you felt as stuffed as your turkey, as joyful as your bubbly grape juice and treasured the special time with your family. We had a rather extravagant Christmas (as usual) in our household. I ate my fair share of turkey, pumpkin fritters and Christmas pudding(s)…and if any of you are like me then you might be feeling a little glum (and full) after the festivities have died down. So this week to cheer you up… I bring you, lightened up…WAFFLES!
